One thing I guarantee you is that after reading this post, you will never have to ask anyone this question again, “how can I preserve food at home?”

Being a professional chef for the past three decades, I know all the tried and tested food preserving methods. So without any further ado, allow me to present you:

My 5 Recommended Methods to Preserve Food at Home

1. Dehydration

Dehydration is arguably the best way to preserve food at home because it’s easy, simple, and effective.

All you need to do to dehydrate meat, fruits, and vegetables, is to use an electric dehydrator.

Here’s one pro tip for preserving grapes, cherries, blueberries, and any other similar fruit:

Pierce the skin of the fruit so that the moisture can evaporate more quickly before using the dehydrator — this leads to longer shelf life. Try this method, and I guarantee that you’ll be surprised at how effective it is.

2. Fermentation

Fermentation is a popular food preserving method in which low acid foods are turned into high acid foods.

To ferment your food, I recommend using salt, whey, or specific starter cultures. Once you’re done, you do not need to store the fermented food in a cool area.

One last thing I wanted to mention about fermentation is that it can change the taste and texture of the food.

So, whichever food you plan to ferment, make sure to read about how it’s taste and texture will change.

 

3. Canning

In a nutshell, canning refers to the heat processing of food in a glass jar for preserving it.

Generally, there are many ways of canning food. But I only recommend the following two:

1. Water Bath Canning: In this method, high acid foods, such as fruits, jams, or tomatoes, are placed inside a water bath canner filled at least half-way with water and then heated to increase shelf life.

2. Steam Canning: In this method, a special canner that uses heat steaming is used for prolonging the shelf life of high acid foods.

Please note that both of these methods work like magic — but only for high acid foods.

4. Pickling

Pickling is one of the easiest and most cost-effective ways to preserve foods at home — which is exactly why I’m mentioning it on my list.

For pickling food, you should either put the food in brine (a solution of salt in water) to produce lactic acid or marinate and store the food in vinegar (or any other acid solution).

5. Curing

Curing is one of the most underrated ways of preserving foods such as meat, fish, and vegetables at home.

For this method, all you have to do is rub a cure (a mixture of salt, sugar, and nitrate) on the food before placing it in a sealable bag and storing it in a refrigerator.

From my years of experience, I can tell you that when it comes to meat preserving methods at home, curing is hands down the creme de la creme.
